Persian dish

There are different type of Persian dish that all Iranian are using everyday

Ash(Porridges):

Ash is a Persian dish that is prepared like soup and is juicy. Different and local dishes are prepared in different regions of Iran, and the som of the best are Ash Reshte, Ashe Sholeh Qalamkar, Ash Doogh and Tarkhineh. Ash is usually made from vegetables, legumes, noodles and some with meat. Despite its watery appearance, it contains various carbohydrates, proteins and vitamins. Carbohydrates are usually provided by grains of wheat and barley. Protein is usually obtained through lentils and legumes, some vegetables and meat, and vitamins and minerals that are found in abundance in various vegetables.

Some parts of Iran serve ash for breakfast and you should prepare it early in the morning and enjoy it for breakfast. In addition to Ash, we have a few other dishes that are usually prepared in the morning, such as Halim and porridge.

Ab-Goosht(Broths):

Another Persian dish is Ab-Goosht. Ab-Goosht, as its name implies(Ab means water and Goosht means meat), is still a juicy food and the pieces of meat are stuffed in it. It is very similar to soup, but with the difference that it is not served like soup. Iranian usually put some pice of bread into the watery part and eat, they call it Tilit. We mixed the rest of the leftovers and eat them separately with the bread. The most famous Iranian broths are Dizy and Bozbash. You could find the best Dizi in all Ghahve-Khane usually.

Khorak:

A part of Iranian food is Khorak that is eaten with bread and we can mention different types of Kotlets, Shami, Dolme, Koofte, Koukou and things like eggplant curd and Mirza Ghasemi.

Khorest(stew):

One of the best Persian dish is the food that we know as a stew, which is food that is eaten with cooked rice. Different stews are prepared in different regions of Iran, but there are a few stews that are cooked almost everywhere in Iran, such as Gheymeh stew, Gorme-sabzi stew, eggplant stew, celery stew, okra stew, spinach stew, pumpkin stew and chicken stew. To eat, the stew is usually eaten on white rice, known as Polo or Chelo.

Polo:

Another type of Persian dish is food that is cooked in pilaf and served as a mixture with rice. some of the best are Adas-Polo (lentil and rice), Loobia-Polo, Mash-Polo (mung bean and rice), Kalam-Polo (Cabbage and rice) and Istanbuli which are a complete dish and are eaten on their own, but we have foods such as Baghali-polo or Sabzi-Polo (vegetables and rice) or Shevid-Polo (dill and rice) that are eaten with a stew.

Kebabs:

At present, in most restaurants, you can see a complete menu of kebabs, and next to it, there are only a few stews, which suggests that Iranian food is usually kebabs, but this is not true. Perhaps in the past and even now, once a month or once every two weeks, kebabs have been used as food in Iranian homes, and most of the foods mentioned above are prepared.
The kebab, because it is made from meat, is definitely made from fish or red meat, which can now be mutton, beef, or sometimes stew. Of course, it is chicken. The most famous kebabs are Kobideh Kebab, Chengjeh Kebab, Barg Kebab, Bakhtiari Kebab, Kebab Chicken and Soltani Kebab.
